According to the type of product, our meats are prepared and sold fresh or subjected to maturing and smoking processes.
The smoking allows to preserve the meat for long time and it’s made in a room where products are wrapped in the smoke obtained by the combustion of hard wood shavings and flavors like juniper and laurel.
Through the maturing , during the time the meats acquire consistency, smell, taste and flavors.
In order to obtain this process in our workshop we’ll reproduce the climatic conditions of the ancient cellar. The level of humidity and the steady temperature make the maturing of the product and the growing of the noble moulds, that are sign of a natural product.

This is the best practice and example of a new model of agriculture, based on quality, knowledge and traditional producing techniques protection, on the respect of seasons and on the wellness of animals. The product is:
- Good: for their high quality and rooted on the land
- Clean: because they are natural, without additives and synthetic chemical products, and their production process respects the natural equilibrium around us and the biodiversity
- Fair: because working conditions are respectful of people, their rights and their culture and they guarantee a right reward in the whole product processing cycle.
Our “Luganega Trentina” is obtained from pork meat of Trentino Region. It’s prepared with pork meat, lard; the whole is minced and spiced with minced pepper, salt and garlic. Put into a natural gut, it’s matured for forty days at least.
